    Summer Recipe: Fig Salad

Think fresh seasonal fruits and light, healthy salads. This summer salad is a firm favourite (and sure to impress at your next garden party)…

If you have a copy of my book Eat Beautiful you’ll know that my skin-first beauty approach includes a diet packed with fresh, healthy, seasonal foods. But healthy doesn’t have to mean boring or bland; which is why I love highlighting the season’s most nutrient-packed (and delicious) hero foods so that you can switch things up every few months. Summer is a great time to add figs into your diet. They are full of fibre, so they flush through the system quickly and help to detoxify the skin, meaning they are a great choice if you have psoriasis, acne or other skin conditions. They also add a touch of natural sweetness to dishes, making a healthier alternative to processed sugars. Sold? Check out my delicious fig salad recipe, which is great for light lunches, picnics or garden parties.

Good for detoxifying the system, figs add a touch of natural sweetness, providing a healthier alternative to processed sugars, which can be detrimental to your skin.

    230 calories per serving

    100g burrata or buffalo mozzarella
    2 fresh figs, quartered
    2 large handfuls of rocket
    1 tbsp extra-virgin olive oil
    1 tbsp balsamic vinegar
    Fresh basil, to serve

    1. Break the burrata or mozzarella into bite-sized pieces and place in a bowl with the figs. Add the rocket and mix well to make sure everything is evenly distributed.
    2. Dress at the last minute, drizzling over the olive oil and balsamic vinegar in a zigzag motion and scatter over basil leaves to serve.
